<h2>Ingredients</h2>
|
|
<ul>

|
<li>1 pound ground beef or cooked shredded chicken</li>
|
|
<li>2 packets taco seasoning</li>
|
|
<li>1 can Rotel</li>
|
|
<li>Water, according to taco seasoning packet directions</li>
|
|
<li>2 cans red enchilada sauce</li>
|
|
<li>Mexican cheese blend, divided</li>
|
|
<li>Flour or corn tortillas</li>
|
|
</ul>

<h2>Directions</h2>
|
|
<ol>
|
|
<li>Cook the ground beef and drain, or cook and shred the chicken.</li>
|
|
<li>Add the taco seasoning, Rotel, and the amount of water called for on the taco seasoning packets. Simmer until thickened.</li>
|
|
<li>Pour 1 can of red enchilada sauce into the bottom of a baking dish.</li>
|
|
<li>Mix some of the Mexican cheese blend into the meat mixture.</li>
|
|
<li>Fill each tortilla with the meat mixture, roll it up, and place it seam-side down in the baking dish.</li>
|
|
<li>Pour the remaining can of enchilada sauce over the top.</li>
|
|
<li>Bake for 20 minutes.</li>
|
|
<li>Sprinkle the remaining Mexican cheese blend over the enchiladas.</li>
|
|
<li>Bake for an additional 10 minutes, or until the cheese is melted and bubbly.</li>
