<p>Carolyn says, “Mama made this for us when we were growing up. She made it with just the noodles and tomatoes, but that’s because she didn’t have any ground beef to add. This was usually served with a pot of butter beans and some pan-friend potatoes (with never enough brown part.)”</p>

<h2>Ingredients</h2>

<ul>

||||
<li>Elbow macaroni or noodles</li>
|
||||
<li>2 cans diced tomatoes</li>
|
||||
<li>1 medium onion</li>
|
||||
<li>1 tablespoon minced garlic, optional</li>
|
||||
<li>1 pound beef</li>
|
||||
<li>Salt and pepper</li>
|
||||
</ul>

||||
<h2>Directions</h2>

||||
<p>In a little olive oil, sauté onions (and garlic if you like)
|
||||
Brown the ground beef in a large skillet and add the onions
|
||||
Meanwhile, boil noodles until soft and drain
|
||||
Mix this all together and add salt and pepper
|
||||
Eat it while it’s hot. Add some parmesan and other grated cheese to top of the individual servings, if you like.
|
||||
We loved it without the meat – you will, too.
|
||||
This makes about 8 servings or 10 if they’re picky eaters picky</p>
