Ingredients
- 1 pound ground beef or cooked shredded chicken
- 2 packets taco seasoning
- 1 can Rotel
- Water, according to taco seasoning packet directions
- 2 cans red enchilada sauce
- Mexican cheese blend, divided
- Flour or corn tortillas
Directions
- Cook the ground beef and drain, or cook and shred the chicken.
- Add the taco seasoning, Rotel, and the amount of water called for on the taco seasoning packets. Simmer until thickened.
- Pour 1 can of red enchilada sauce into the bottom of a baking dish.
- Mix some of the Mexican cheese blend into the meat mixture.
- Fill each tortilla with the meat mixture, roll it up, and place it seam-side down in the baking dish.
- Pour the remaining can of enchilada sauce over the top.
- Bake for 20 minutes.
- Sprinkle the remaining Mexican cheese blend over the enchiladas.
- Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
